Rosalind's Cheesy Broccoli Bake
Rosalind Bushell has been one of my dearest friends for over 20 years.  Her recipes are legendary and many times over the years she's regaled me with her secret ingredient recipes when I was trying to impress someone in the culinary department.  Now, for the first time, exclusively on What's Cooking, she shares with the world the phenomenon that is, her Cheesy Broccoli Bake
INGREDIENTS

200g broccoli florets
salt
two 29g packets cheese sauce mix
300ml milk
1 level tbsp wholegrain mustard
ground black pepper
3 medium eggs
75g grated cheddar cheese

COOKING INSTRUCTIONS

1.   Cut broccoli florets into small pieces
2.   Cook in salted boiling water for 2-3 minutes
3.   Make cheese sauce mix according to packet instructions
4.   Add the mustard to cheese sauce mix, stirring well
5.   Add broccoli and seasoning to taste
6.   Separate 3 eggs
7.   Whisk egg whites until they form soft peaks
8.   Stir the egg yolks into broccoli mixture
9.   Fold egg whites gently into mixture
10.  Pour mixture into shallow ovenproof dish
11.  Sprinkle 75g cheddar cheese on top
12.   Bake in preheated oven, gas mark 4 (180C/350F) for 45 minutes
